Corned Silverside

Our take on the family favourite. Delicious and super-versatile. Simmer with herbs for a meltingly tender roast or slice into minute steaks for a yummy dinner or chunky sangers for tomorrow. No added hormones. No MSG. Gluten-free. Nut-free.

How to cook
  1. Remove from bag and rinse corned silverside under cold water, place in large saucepan and cover with cold water.
  2. Bring to slow simmer, skimming as necessary.
  3. Add aromatics like a few bay leaves, a few cloves, black peppercorns and a couple of tablespoons of brown sugar.
  4. A whole peeled onion is a good addition. A splash of orange juice or vinegar imparts a little flavour and assists tenderness.
  5. Cover and let meat simmer until tender (allowing 30 minutes per 500gms of silverside).
  6. Carve and serve.
  7. Return remaining meat to cooking liquid to cool completely.
