Corned Silverside
Our take on the family favourite. Delicious and super-versatile. Simmer with herbs for a meltingly tender roast or slice into minute steaks for a yummy dinner or chunky sangers for tomorrow. No added hormones. No MSG. Gluten-free. Nut-free.
- Remove from bag and rinse corned silverside under cold water, place in large saucepan and cover with cold water.
- Bring to slow simmer, skimming as necessary.
- Add aromatics like a few bay leaves, a few cloves, black peppercorns and a couple of tablespoons of brown sugar.
- A whole peeled onion is a good addition. A splash of orange juice or vinegar imparts a little flavour and assists tenderness.
- Cover and let meat simmer until tender (allowing 30 minutes per 500gms of silverside).
- Carve and serve.
- Return remaining meat to cooking liquid to cool completely.
